Updates an activity's activity_type, subject, description, scheduled_at, direction,
latitude or longitude. Send only the fields you want to change inside an activity object.
An activity's date can't be changed after it is logged.

You can update your own activities; updating someone else's requires a role that can act on every
record. A validation failure returns 422 with an errors list.
